Sourdough Pasta

 

2 cups of flour

2 eggs

2 tablespoons of olive oil

1/4 cup of starter

Mix and shape as for any homemade pasta.  You may need to add more flour if your starter is really wet. 

If you want to break down the gluten, coat in olive oil and let it sit for 6 hours.  I also use cup for cup gluten-free flour to dust the pasta with as I work it.

I also learned that fermenting wheat also lowers the glycemic index, so I feel much better eating sourdough pasta as well as sourdough bread.
